Hens are laying faster than we can eat omelettes, which means only one thing: lemon curd.

Have just made a pudding of lemon curd mousse on elderflower- drenched sponge, decorated with crystallised elderflowers. Delicious and pretty - win. win!

Talking of elderflowers, a year's supply of cordial is jostling for space in husband's beer fridge in man-cave down the garden. Just add Prosecco.....
