Learn how to make this classic nip in the traditional fashion - and how to apply the principles to other fruits e.g. cassis or quince vodka or raspberry brandy......... tasting is essential!

Apple Day

Come and learn how to crush and press fruit. Blend your own fruit juice & learn how to preserve it by pasteurisation. Stay to a lunch of home-produced pulled pork and apples & learn the principles of small-scale cider-making.

Marmalade

​

Really good home-made marmalade is a must for any pantry. Traditional Seville oranges are only in season during January & February, so that's when we make it.

Pickles & Flavoured Vinegars

​

Learn the basic principles of wet and dry-brining to create just about any pickle you like - from the crunchiest pickled onions to spiced pickled pears. Get a feel for creating different flavoured vinegars to enhance your pickles, or simply to use as dressings.

Curds & Cheeses

​

Learn how to make delectable fresh fruit curds, cheeses & fruit butters. During quince season (Oct/Nov) also learn how to make Membrillo - a fantastic addition to cheese-boards.

Christmas Edible Gifts

​

Come and make the most delicious concoctions for your family: e.g. succulent mincemeat, individual Christmas cakes and an Irish cream liqueur.
